Banoffee Pie Cupcakes

Now I know that this recipe is more for people with a sweet tooth, but when I saw this recipe in an Easy Cupcakes Cookbook that I got for Christmas, and I thought oh my god I have to make this because Banoffee Pie is my number one favourite thing in the world. Anyway, here is the recipe for Banoffee Pie Cupcakes.

This recipe makes 4 Banoffee Pie Cupcakes.

You will need cups or dishes instead of cupcake cases.

Ingredients:

100g/3 1/2 oz softened butter plus extra for greasing
100g/3 1/2 oz soft light brown sugar
2 egg, lightly beaten
100g/3 1/2 oz self-raising flour
1 small ripe banana, peeled and mashed

Topping:

150 ml/5 fl oz double cream
1/2 banana, peeled and sliced
dulce de leche (toffee sauce)
chocolate grated

Recipe:

1) Preheat the oven to 190°c / 375°F / Gas Mark 5. Grease  4 200 ml / 7 fl oz ovenproof teacups or dishes (such as ramekins) with butter.
2) Put the butter and sugar in a bowl and beat together until light and fluffy. Gradually mix in the eggs. Sift the flour and, with a metal spoon, fold in the mixture with the mashed banana. spoon the mixture into the cups or dishes.
3) Put the cups or dishes on a baking tray and bake for 20-25 minutes or until rien and golden brown. Leave to cool.
4) To make the topping, whisk the cream in a bowl until softly peaking. spoon the whipped cream on top of each cupcake then arrange 3-4 banana slices on top. Drizzle over the dulch de leche and sprinkle over the grated chocolate. Store in the fridge or enjoy!

Review: Oh my word, they are so so good, the contrast of the moist, spongy, bananary cupcake and the cream and toffee compliment eathother so well absolutely delicious. 10 out of 10!
